Making Potato Sausage

This last weekend, 17 participants gathered at the ELC church in Cokato to learn from Heidi and her helpers, husband Bruce and brother Cory, how to make potato sausage. It was a group effort, which is a great way to make it. Heidi provided the ingredients - ground pork, ground beef, potatoes, onion, salt and pepper, and beef casings. Participants and helpers provided the labor - slicing and grinding onions and potatoes, mixing all the ingredients in a large bin, and running the mixture through the stuffer to make large sausage links for everyone to take home with them. It was a social affair. People took turns at the jobs and observing and chatting on the side. Cleanup also went smoothly with all the help - many hands make light work. The event was a big success. Thanks again to Heidi, Bruce, and Cory for teaching this class for us, and for all the participants who came out to help, learn, and enjoy it! And, the potato sausage was, of course, delicious!
